Packet Capture & Analysis
Wireshark is a very capable, mature and popular GUI based packet capture and analysis tool available for most platforms including Windows.

Most Linux distributions (and network devices utilising Linux) have the extremely useful command line packet capture tool tcpdump installed.

SFTP/FTP Servers

Text Editors
We use Context, available here: http://www.context.cx/. It's free, small, works well and there are a great number of well written highlighers for different formats such as html, css, tcl and cisco configuration files.
DHCP Servers
